This was a shorter walk for us as it was a “morning” walk. So, why the quotes around morning? Our schedule here is pretty crazy. We go to bed around 7 am and get up around 4 pm. I still call the time when I get up morning, even thought it’s actually in the afternoon.
Keeping track of the days/times could drive a person crazy. I choose to simplify it by putting it in terms I’m already used to. So, say I get up on a Wednesday at 4 pm. I think of it as my Wednesday morning. I usually check in at work and unless there are fires that need to get put out I’m free until 10 pm Wednesday, which is 9 am Wednesday morning in the US. I’ll work until bedtime, 7 am Thursday in Singapore, which is 6 pm Wednesday in the US. I consider 7 am Thursday in Singapore my Wednesday night. Ok, so now you can see how confusing it can be and why it makes my head spin!
One of my Tuesday mornings Kuah and I decided to walk to Vivo city for our breakfast. It’s about a 2.5 mile walk each way. I love the Vivo City mall, except on weekends when it’s crazy busy.
We found a great healthy solution in the mall’s food court. Unlike a typical US mall food court this one had a fun old stye China theme. There were lots of red lanterns and some fish on the ceiling.
In the US Kuah and I tend to eat Panda Express and Snappy Salads at the mall. This food court provided a lot more interesting choices. I choose the one I believed was healthiest option. You choose the proteins and vegetables and they stir fry it or cook it in a soup. I choose the medium spice level which was doable but almost too spicy for me. Having it cooked in a soup meant less oil and the spiciness really kick-started my metabolism.
I got some tofu, water spinach and my favorite, lotus root. Kuah picked one of their menu options that came with noodles. Of course he can eat noodles everyday unlike me! Here’s a look at the food bar and final dishes.
You can see the spicy level by how red the broth is. Just a year ago there is no way I would’ve been able to eat this soup.
