One of the things that made our stay in Italy so fun was the delicious food Kuah cooked for us. Having a great kitchen in the villa made it more enjoyable for him to cook.
To start the day right Kuah often made us eggs with fresh chives, peppers and truffle pecorino. Starting out the day with a healthy and delicious meal definitely makes a difference. We were lucky to find a chive plant at the grocery store so Kuah could just snip off some fresh chives whenever he needed them. The truffle pecorino came from the artichoke festival and had rich strong truffle flavor.
We also found the kitchen useful for dinner. Italians like to eat dinner late in the evening with many restaurants opening at 7 or 8 in the evening. We’re more likely to eat at blue plate special time. Late dinners can be tough on digestion and lead to heartburn for us. So our kitchen gave us the ability to have some great dinners on our schedule. One of my favorite things turned out to be Agretti. It’s a green vegetable that gets steamed and then dressed with olive oil and lemon juice or balsamic vinegar. It’s super simple to make and really delicious.
We also had a fish dinner and made a simple caponata. The red peppers in Italy were so flavorful. The only negative is I’ve been disappointed in peppers since coming home. When Kuah made a bolognese I only had a bit of pasta and used the rest on red peppers. I’d eat that all the time if I could get those peppers!

Our first full day in Umbria we stopped by a tiny weekly neighborhood market. We didn’t find too much there of interest but we did get a package of semolina crackers. They were super thin and had just the right amount of crunch and saltiness. We ended up adding them to a lot of our meals. To help keep my iron up we also made some dinners with Bresaola. Kuah made a side truffle pasta to accompany it. Having bought a variety of giardiniera style vegtables to eat with meals made it easy to always have a variety of veggies with meals. Now I’m wishing I was eating an simple Italian dinner.
